For a light spring dish to pair with our 2015 Pinot Gris, make this wonderful Cantaloupe Salad!

Cantaloupe Salad with Basil, Fresh Mozzarella & Onions

Ingredients:

  • 1 cantaloupe (cut into 1 inch cubes)
  • 15 leaves basil cut into chiffonade/thin strips (reserve a few whole leaves for garnish)
  • 10 green olives (sliced)
  • 14 red onion (thinly sliced)
  • 1 cup fresh mozzarella balls (sliced into quarters)
  • Olive oil
  • Red wine vinegar
  • 1 lime
  • Salt and pepper to taste

Directions:

Mix all ingredients together and serve chilled. This salad is a perfect side dish for grilled fish or chicken because it is light and fresh in flavor.

With the ripe cantaloupe, soft mozzarella and fresh basil, this recipe pairs perfectly with Laurel Gray’s Pinot Gris.
